Two days (one day at each park) is the minimum. You could add more days at your discretion, however 5 days might be a little too much.
Re: Is 2 days enough for Universal? I would say a day in each park is enough to do each ride. Depending on your dates in December, the closer you get to xmas week the parks will be very busy and yes you can buy Fast passes. The Fast pass can't be used on rip ride rocket or the Harry potter rides.
With only a 2 day itinerary, it is wise to choose a park-to-park admission ticket. This will allow you to visit both parks on the same day if you like, as well as ride aboard the Hogwarts Express (a highlight for Harry Potter fans). I also suggest purchasing a Universal Express Pass if it is within your budget.

Universal's Volcano Bay is worth visiting if you are staying at the Universal Studios Resort in Orlando or nearby. However, if you're staying at Walt Disney World or are more than 15 miles away, then a trip to Volcano Bay isn't likely to be worth the cost or hassle unless you love water parks.
