Mace WinduIt was not until Chapter 25 (or Season 3 Episode 5 if you prefer) that Grievous had a showdown with Mace Windu. During the encounter, Windu used the Force to crush the chest plates of Grievous, severely injuring his lungs, and causing his now distinctive cough, which made its way into Revenge of the Sith.
Before becoming a cyborg, Grievous was a Kaleesh Warrior. The Kaleesh were humanoids, so they only had two arms. Grievous's organic body was destroyed by a bomb, and was replaced by the Cybernetic form that we know now. He had four arms right from the start as a cyborg.
He collected them from Jedi that he had slain in battle. Since Grievous chose to take the weapons from fallen Jedi opponents as opposed to crafting his own, the sabers are the colors they are because Jedi traditionally tend to have either green or blue bladed lightsabers, not red.
General Grievous had an intense hatred for the Jedi, who had sided with the brutal and oppressive Huks during the Huk War, who enslaved his people. Whenever he got the chance, Grievous would hunt down and kill Jedi, taking their lightsabers as war trophies.
To do so he tells Grievous that he must have suprise, fear, and intimidation on his side and if he can't throw off their focus very early he would be at a severe disadvantage and ideally should retreat.
Over the lengthy course of the Clone Wars, Grievous relentlessly pursued and slaughtered the Jedi, and was renowned for claiming their lightsabers as both trophies and weapons, to be used against other foolish Jedi opponents in future engagements.
Within Star Wars Legends material, Grievous was born Qymaen jai Sheelal and was a Kaleesh warlord who developed a personal vendetta against the Republic and the Jedi. After suffering near-fatal injuries in a ship crash, he was rescued by Count Dooku (who was secretly responsible for the crash) and rebuilt as a cyborg.

During the war, Grievous and Jedi Knight Pablo-Jill had a duel over the world of Duro in a collapsing satellite city. Jill was ultimately left injured and lost his lightsaber to Grievous. At some point, Grievous killed Jedi Master Jmmaar and took his green-bladed lightsaber in order to add to his own collection.

In the Mandalorian Season 2 you will note that Bo Katan doesn't have too many followers left. So because she lost the Darksaber in single combat she believed that in order to reclaim the leadership of the surviving Mandalorians she had to defeat Moff Gideon in single combat.
